Could I use this for mesh pockets on a pack? Would it be strong enough to withstand a proper thruhike?

Yes you could use it for pockets on a pack however it you are that concerned about it taring you may want to use something else as you know what you intend the pocket to be used for. Maybe go to pack material?

How soft is this mesh? I have some from another vendor that is very stiff feeling. Is this like soft fabric or more like plastic feel?

I wouldn’t say this is soft mesh but its certainly not very stiff either. I’d say somewhere in the middle.
